Peaches flow like wine during the summer months here in Georgia, and peach salsa is one of my favorite ways to use up a pound or so of them.

It’s a sweet and spicy combination that stands perfectly well on its own but also makes a great topping for a variety of dishes.

How to Choose Peaches for Salsa

The key to getting the perfect texture for this salsa lies in the ripeness of the peaches.

You’ll want to pick peaches that are ripe, but still a little firm.

Overly ripe peaches will turn to mush when you try to dice them and make the salsa watery. Green peaches will be crunchy and not add enough sweetness to the salsa.

So, when selecting your peaches, just think of Goldilocks’s bed: not too hard, not too soft, but just right.

Pro Tip: To evenly ripen peaches, place them in a brown paper bag. Fold the top of the bag over and store in a dark, room temperature location for 1-2 days, or until the peaches are slightly soft to the touch.

How to Make Peach Salsa

Start by finely dicing all the fresh ingredients. You could probably use a food processor for this step if you desire, but I prefer the chunky texture that dicing by hand gives.

Add everything to a large mixing bowl, then season with cumin, sea salt and lime juice and give everything a nice toss.

Allow the salsa to sit for 15-20 minutes to give the flavors a chance to meld and marry, then serve as desired.

The salsa will keep for about a week if stored in a tightly covered container in the refrigerator.

What to Do with Peach Salsa

As I previously mentioned, the sweet and spicy flavor of this salsa is great on its own, but it can also be used to enhance the tastiness of a variety of dishes.

Just a few serving suggestions are:

  • Serve the salsa as an appetizer with your favorite gluten-free chips
  • Add it to some turkey or chicken tacos wrapped in cassava flour tortillas
  • Combine it with grilled chicken breast and lettuce for a yummy salad
  • Top it on some pan-seared or grilled whitefish (tilapia, halibut, grouper are all tasty choices).
  • Stuff the salsa in half an avocado for a quick snack.

The possibilities are almost endless! Enjoy!
