The Story of Jerk Chicken Salad
Variety might be the spice of life, but in Jamaica it is jerk seasoning. After stuffing myself with jerk chicken for a solid week during a visit there last summer, we picked up a jar of Walkerswood Jerk Seasoning to bring a little Jamaica back home with us. It sat around for the kitchen for a little while, until one day while I was whipping up some my standard chicken salad I came across the jar and decided to spice things up a little bit.
Magic was born.
This jerk chicken salad has a little sweet, a little crunch, and a little kick. Try it out for yourself and you’ll never want to go back to that boring old regular chicken salad.
JERK CHICKEN SALAD
Ingredients:
1 large boneless chicken breasts, cooked and cubed.
1 carrot, diced
1 celery stalk, diced
1/2 apple, peeled and diced
2 tbls minced onion
1/4 cup crushed walnuts
1 tsp garlic powder
1 tsp high quality jerk seasoning (I used Walkerswood)
1 tbls fresh parsley
1 cup homemade paleo mayonnaise
Salt and pepper to taste
Process:
1. Combine first nine ingredients in a mixing bowl
2. Add mayonnaise and mix well (add more mayo until desired consistency is reached)
3. Serve over fresh spring greens, sprinkle paprika on top
