Omelettes are a pretty personal subject. Everyone seems to have their own ideas about the best way to fill one. I guess that’s why the omelette station is a thing.
Recently, my favorite omelette is one that involves turmeric. If you’ve never experienced the combination of eggs and turmeric, you are in for a treat. The flavor is intense and incredible.
The smoked turkey part of the omelette just involves some simple lunch meat. I get some pretty amazing smoked turkey from my local farmer’s market with the following amazingly clean ingredients: turkey, salt, and water.
To complete my smoked turkey and turmeric omelette, I like to add onion, green pepper, mushrooms, cherry tomatoes, and chives. The result is an omelette that is bursting at the seams with fixin’s and flavor.
Beat the eggs with a 1/2 teaspoon of turmeric, a tablespoon of cold water (makes the eggs a little fluffier), and a little salt and black pepper.
Heat a tablespoon of ghee in a skillet and sauté the diced onion, pepper, and mushrooms. A few minutes later, add the smoked turkey and cook until it crisps up a bit.
Finally, add some cherry tomatoes and chives and cook for a few minutes until the tomatoes are blistered.
Transfer the mixture to a bowl and wipe the skillet clean. Add another tablespoon of ghee and pour in the eggs. As the eggs set, gently push the edges towards the center of the pan as you tilt it.
Once the eggs have fully set, place the turkey mixture on one side and fold the omelette in half. Plate and enjoy!
Smoked Turkey & Turmeric Omelette
Ingredients
- 3 eggs
- 1/2 teaspoon turmeric
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon water
- 2 tablespoons diced onion
- 2 tablespoons diced green pepper
- 2 oz. smoked turkey roughly chopped
- 1/4 cup sliced mushrooms
- 1/4 cup cherry tomatoes halved
- 1 tablespoon fresh chives chopped
- 2 tablespoons ghee divided
Instructions
- Crack the eggs in a bowl and whisk together with the turmeric, salt, pepper, and water.
- Melt 1 tablespoon of ghee in a non-stick skillet over medium high heat. Add the peppers and onions and sauté until translucent, about 5-6 minutes.
- Add the turkey and mushrooms and cook until the mushrooms are tender, 4-5 minutes.
- Finally add the tomatoes and chives and cook until the tomatoes are blistered, 2-4 minutes.
- Transfer the mixture to a bowl and wipe the skillet clean. Melt the remaining tablespoon of ghee and and the eggs. Using a spatula, gently push the edges of the eggs towards the center of the pan to allow liquid to flow towards to edge.
- Once the eggs are firm, spread the mixture on one half of the omelette. Fold in half, plate and enjoy.
