Riced cauliflower is one of those staples of the paleo diet that you just can’t live without. Sure you can make all the great stews and stir fries that your heart desires, but what do you serve it on? Riced cauliflower, that’s what.
Here’s my foolproof method on how to rice cauliflower. It does involve a food processor. You could grate the cauliflower by hand if you’re in a pinch, but it’s going to be a lot of work and you will end up with some bloody knuckles. Don’t say I didn’t warn you.
Riced Cauliflower
Ingredients
- 1 large head of cauliflower
- 2 Tbs ghee or grass fed butter
- sea salt
- black pepper
Instructions
- Roughly cut cauliflower florets from the stem. Rice using a food processor with a grate attachment.
- Transfer cauliflower to a large microwave safe bowl and tightly cover with plastic wrap. Poke a few holes in the plastic to allow steam to escape.
- Microwave for 10-12 minutes, or until tender.
- Fluff with a fork and season with ghee, salt, and pepper. Enjoy!
