We all know that avocados are the best. They’re soft. They’re creamy. They’re loaded with good fat. Their pure deliciousness can enhance a wide range of dishes. But what happens when the avocado itself becomes the dish? Good things.
There’s more than one way to stuff an avocado; these salmon stuffed avocados are just one example. It involves a deceptively simple technique that results in an impressive presentation. You simply mix up some salmon salad and stuff it into a halved avocado which you are using as a bowl.
I think it tastes pretty good. If you’re looking for a quick and delicious lunch, this is it.
Cut the avocados in half lengthwise and open them. Give the pit a good whack with your knife, and with a twisting motion, remove it.
Scoop a little bit of the flesh into a mixing bowl. Add in the canned salmon, green onion, mayo, herbs, and lemon juice. Stir to combine, but don’t over do it–you want the mix to remain a little chunky.
Fill the avocado shells with the mixture and dig in!
Salmon Stuffed Avocados
Ingredients
- 1 ripe avocado
- 6 oz canned salmon
- 2 green onions minced
- 1 tablespoon fresh dill
- 1 tablespoon fresh parsley
- 1/4 cup mayonnaise homemade preferred
- 1 tablespoon lemon juice
- sea salt and pepper to taste
Instructions
- Cut the avocados in half lengthwise and remove the pit.
- Scoop a small amount of the flesh into a mixing bowl and add in the remaining ingredients.
- Stir until just combined (try not to over mix).
- Fill the avocado shells with the mixture and enjoy!

These were delicious!! I had no green onions, so I substituted a little red onion. I will definitely make these again.
