There are times when you can revel in the kitchen. You know, really immerse yourself in the minutia of preparing a complex, time-intensive recipe.
Then there are those times when you just need to cook something…fast.

With some tasty meat from Karv, creating delicious, healthy meals was as easy as just adding vegetables.
For this easy weeknight meal, I just complimented a pair of Karv’s Frenched Pork Chops with a few simple ingredients to serve up a tasty dinner in no time flat.
I started by cubing a couple sweet potatoes and tossing them in some olive oil, salt, and pepper. From there they went onto a parchment-lined baking sheet and into a 400°F preheated oven for about 10 minutes.
I then added some cubed Honeycrisp apples and sliced sweet onion to the mix. I continued roasting everything for another 10-15 minutes until the potatoes and apples were tender.
What I love about Karv’s meats are that they are incredibly flavorful own their own; there’s no need to deal with seasonings or marinades if you don’t want to. Just a dash of salt and pepper were all these chops needed.
I seared the pork chops in some coconut oil in cast iron skillet for about a minute on each side. I continued turning them every minute or so until a nice crust had formed and they were cook through.
Finally, I plated the pork chops with the roasted apples and sweet potatoes and a handful of baby kale. Voila! Dinner was served.

Sautéed Pork Chops with Roasted Apples & Sweet Potatoes
- 2 bone-in pork chops
- 1 tablespoon coconut oil
- 2 medium sweet potatoes cubed
- 2 apples cubed
- 1/2 sweet onion sliced
- 1 tablespoon olive oil
- sea salt
- black pepper
Preheat the oven to 400°F.
In a large mixing bowl, toss the sweet potato with the olive oil and a pinch of salt and pepper.
Spread on a parchment-lined baking sheet and transfer to the oven. Roast for 10 minutes.
Mix in the apples and onion onto the baking sheet. Continue to roast for another 10-15 minutes until the apples and sweet potatoes are tender.
For the Pork Chops
Pat the pork chops dry with paper towels and generously season both sides with salt and pepper.
In a heavy-bottomed skillet, heat the coconut oil over medium high heat. Add the pork chops and sear for one minute. Flip the pork chops over and sear the other side for another minute.
Continue to turn the pork chops every minute until a nice crust forms and the center reaches 145°F. Allow them to rest for a few minutes before serving.
